The Secret to Perfectly Gooey Centers
Freezing the cheese before breading is a small step that makes a big difference. Not only does it help the coating adhere better, but it also keeps the cheese from melting too quickly in the air fryer. As a result, you get that signature stretch without any messy leaks.
Then, the quick second freeze after breading locks everything in place. Although it might seem like an extra step, it’s the key to achieving that picture-perfect texture every time.
A Ponzu Aioli That Steals the Show
While classic marinara is always a solid choice, the ponzu aioli brings a fresh twist that feels modern and bright. The citrus notes cut through the richness of the cheese, and the hint of honey rounds everything out. Consequently, each bite tastes layered and balanced rather than heavy.
It’s the kind of dipping sauce that guests will ask about — and once you try it, you’ll want to pair it with everything from fries to roasted vegetables.
Tips for the Best Results
Freeze the cheese thoroughly so it holds its shape while cooking.
Double coat the sticks for maximum crunch and better melt control.
Avoid overcrowding the air fryer so the hot air can circulate evenly.
Serve immediately for the ultimate gooey texture.
Perfect for Any Occasion
Because they’re easy to share and universally loved, these mozzarella sticks fit just about any moment. Serve them as a party appetizer, a cozy movie-night snack, or even a fun starter for a casual dinner. Crispy, cheesy, and paired with a bright, flavor-packed dip, these air-fryer mozzarella sticks prove that comfort food can still feel fresh and exciting.
