A wonderful gluten free alternative to beer is apple cider. The cider adds a unique fall flavor component to these seasonal waffles.

Gluten Free Apple Cider Waffles Recipe

Ingredients 

  • 4 large eggs
  • ¼ cup millet flour
  • ¼ cup gluten-free oat flour
  • ¼ cup coconut flour
  • ¼ cup potato starch
  • 2 tablespoons granulated sugar
  • cup coconut oil, plus more for greasing the waffle iron
  • 1 vanilla bean pod
  • ½ cup sparkling apple cider
  • Grilled apples, for topping
  • Chocolate shavings, for topping
  • Pumpkin puree, for topping

Instructions 

  • Preheat the waffle iron to medium-high and grease it with oil.
  • Separate the egg yolks from the whites. Beat the egg whites until stiff. Set aside.
  • In a large bowl, add all flours, potato starch, and sugar, and whisk to combine.
  • Add egg yolks and oil, and mix well until incorporated with the dry ingredients. Split the vanilla pod in half lengthwise and scrape the seeds into the mixture.
  • Gradually add apple cider, stirring gently with a spatula. Gently stir in the beaten egg whites.
  • Once the waffle iron is hot, ladle in the batter. Follow the manufacturer’s instructions for cooking. Cook until the waffles are golden brown.
  • Serve immediately, topped with grilled apples, chocolate shavings, and pumpkin puree.
