A wonderful gluten free alternative to beer is apple cider. The cider adds a unique fall flavor component to these seasonal waffles.

The apple cider adds a unique fall flavor to these seasonal waffles.
Ingredients
- 4 large eggs
- ¼ cup millet flour
- ¼ cup gluten-free oat flour
- ¼ cup coconut flour
- ¼ cup potato starch
- 2 tablespoons granulated sugar
- ⅓ cup coconut oil, plus more for greasing the waffle iron
- 1 vanilla bean pod
- ½ cup sparkling apple cider
- Grilled apples, for topping
- Chocolate shavings, for topping
- Pumpkin puree, for topping
Instructions
- Preheat the waffle iron to medium-high and grease it with oil.
- Separate the egg yolks from the whites. Beat the egg whites until stiff. Set aside.
- In a large bowl, add all flours, potato starch, and sugar, and whisk to combine.
- Add egg yolks and oil, and mix well until incorporated with the dry ingredients. Split the vanilla pod in half lengthwise and scrape the seeds into the mixture.
- Gradually add apple cider, stirring gently with a spatula. Gently stir in the beaten egg whites.
- Once the waffle iron is hot, ladle in the batter. Follow the manufacturer’s instructions for cooking. Cook until the waffles are golden brown.
- Serve immediately, topped with grilled apples, chocolate shavings, and pumpkin puree.
