Apple-Cranberry Bake

We love to eat this baked and served with ice cream and warm caramel sauce, but we are not entirely above eating it straight from the fridge.
Apple-Cranberry Bake
Ingredients
- 3 large Granny Smith apples, , cored and sliced ¼ inch thick
- 1½ heaping cups, (about 150 g) frozen cranberries
- 4 tablespoons (50 g) granulated sugar
- ½ teaspoon apple pie spice powder
- 1 cup (80 g) gluten-free quick-cooking oats
- ¾ cup (150 g) brown sugar
- A pinch of kosher salt
- ½ cup (55 g) chopped pecans
- ¼ cup (20 g) shredded unsweetened coconut
- ¼ cup (35 g) gluten-free flour with xanthan gum, such as Bob’s Red Mill
- ½ cup (118.5 mL) melted butter or butter substitute, such as Earth Balance buttery spread, plus more for buttering the dish
Instructions
- Preheat the oven to 375 ° F. Butter a 2-quart baking dish; set aside.
- In a large bowl, mix together the apples, cranberries, sugar, and apple pie spice. Spoon into the prepared baking dish.
- In a medium bowl, mix together the oats, brown sugar, salt, pecans, coconut, and flour. Stir in the melted butter or substitute.
- Sprinkle the oatmeal mixture evenly over the top of the apples. Bake for 30-40 minutes until bubbly and the apples are tender.
- Serve warm or cold with a scoop of vanilla ice cream, if desired.
