Bacon-Wrapped Stuffed Dates

Bacon-Wrapped Stuffed Dates
Ingredients
- 24 Medjool dates
- 4 ounces goat cheese, softened
- 12 slices bacon
Instructions
- Preheat the oven to 400ºF. Place a wire cooling rack on a rimmed baking sheet.
- Cut a lengthwise slit into each date and remove the pit. Stuff each date with some of the goat cheese. Pinch the dates closed.
- Cut the bacon slices in half crosswise. Wrap each date securely with the bacon and place seam side down on the wire rack. Bake for 10 minutes, flip the dates over, and bake for another 10 minutes or until the bacon is crispy.
- Serve warm or at room temperature. (Can be made 1 day ahead and stored, covered with plastic wrap, in the refrigerator. Reheat in the microwave for 45-60 seconds before serving.)
