Ingredients
- 8 wooden skewers
- 1 lemon
- 4 garlic cloves , peeled and minced
- 3 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon dried oregano
- ¼ teaspoon chili flakes , or to taste
- ½ teaspoon fine sea salt
- ¼ teaspoon freshly ground black pepper
- 2 chicken breasts (about 14 ounces), cut into cubes
- 2 small zucchini (about 14 ounces), cut into rounds
- 2 large red pepper , seeded and cut into squares
- ½ cup fresh chives , shredded
Instructions
- Soak the wooden skewers in water for about 30 minutes. Grate the zest from the lemon, then squeeze the juice into a small bowl. Set aside. Preheat the grill to medium-high heat.
- Prepare the marinade. In a bowl, mix together the garlic, olive oil, lemon juice and zest, honey, oregano, chili flakes, salt, and pepper. Add the chicken cubes to the marinade and let it marinate for at least 30 minutes.
- Thread the chicken, zucchini, and peppers onto the skewers, alternating between the three. Grill the skewers for about 15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred. Top with chives. Serve hot and enjoy!
