Cold Cucumber Soup with Irish Sea Moss

Ingredients 

  • 2 English cucumbers
  • 1 garlic clove, , minced
  • 1 ½ cups plain Greek yogurt
  • ¼ cup extra virgin olive oil, , plus more for serving
  • ¼ cup loosely packed dill, , plus more for garnish
  • 2 tablespoons fresh basil
  • 4 teaspoons BareOrganics Organic Irish Sea Moss Powder
  • Juice of 1 lemon, (about 3 tablespoons)
  • Kosher or fine sea salt, , to taste
  • Freshly ground black pepper, , to taste
  • 2 green onions, , thinly sliced

Instructions 

  • Coarsely chop 1 ½ cucumbers. Finely dice the remaining half and set aside for garnish.
  • Place the cucumbers, garlic, yogurt, ¼ cup olive oil, dill, basil, Irish Sea Moss, and lemon juice in a blender and blend until smooth. Season to taste with salt and pepper. Chill for at least 4 hours.
  • To serve, garnish with finely diced cucumbers, dill, and green onions.
