Chocolate Orange Loaf Cake
Ingredients
- 1 cup unsweetened applesauce
- 4 large eggs, - at room temperature
- ½ cup honey or pure maple syrup
- ¼ cup butter or coconut oil (plus more for greasing), - melted
- 2 tablespoons fresh orange juice
- 1 tablespoon orange zest
- ½ cup coconut flour
- ½ cup blanched almond flour
- ⅓ cup cocoa powder
- ¾ teaspoon baking soda
- ½ cup dark chocolate chips
- Ice cream or dairy-free ice cream, - for serving
- Fresh raspberries, - for serving
Instructions
- Preheat the oven to 350ºF. Line an 8x4-inch loaf pan with parchment paper and grease the paper with butter or coconut oil.
- In a medium bowl, combine the applesauce, eggs, honey, butter, orange juice, and zest. Add the coconut flour, almond flour, cocoa powder, and baking soda. Stir to combine thoroughly. Stir in the chocolate chips. Transfer to the bread pan and spread out in an even layer.
- Bake for about 45-55 minutes or until a skewer inserted into the center of the loaf comes out clean. If the loaf starts to brown too quickly, cover loosely with foil during baking. Cool completely before slicing. Serve slices topped with ice cream and raspberries.
