Cinnamon Sugar Cream Cheese Rollups

These Cinnamon Sugar Cream Cheese Rollups feature cream cheese spread over gluten-free bread slices rolled up, dipped in butter, then coated in cinnamon sugar and baked to perfection for a fun, easy dessert! These can be made dairy-free or with dairy, and they’re a great way to use up a loaf of gluten-free bread. You can also half this recipe if you don’t have a full loaf of bread.
Cinnamon Sugar Cream Cheese Rollups
Ingredients
- 1 loaf gluten-free sliced bread, (13-14 slices)
- 8 ounces regular or dairy-free cream cheese
- 1 teaspoon pure vanilla extract
- 1 cup coconut sugar or regular sugar, , divided
- 3 teaspoons ground cinnamon
- ½ cup butter or dairy-free butter
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
- In a medium bowl, beat together the cream cheese, vanilla, and ¼ cup sugar until well incorporated. Refrigerate while you prepare the rest of the recipe.
- In a shallow bowl, whisk together ¾ cup of sugar and 3 teaspoons cinnamon, and set aside. In another small bowl, microwave the butter until melted, about 30-45 seconds.
- Cut the crusts off each bread slice. Microwave 1-2 slices of bread at a time for 13-15 seconds, then gently roll the slice of bread flat with a rolling pin, making sure to get the ends well.
- Spread about ½ tablespoon of cream cheese filling on a slice of bread, then roll the bread slice. Dip the roll in the melted butter, then gently roll it in the cinnamon sugar and place it with the seam side down on the prepared baking sheet. Repeat with each slice of bread.
- Bake for 15 minutes.
