Classic Tomato Gazpacho

This Classic Tomato Gazpacho is refreshing, vibrant, and full of summer veggies.

Classic Tomato Gazpacho
Ingredients
- 6 vine tomatoes, , chopped (about 2 lbs/1 kg)
- ½ medium cucumber, , chopped
- 1 red bell pepper, , chopped
- 1 shallot, , finely chopped
- 2 cloves garlic, , finely chopped
- ¼ cup (60 mL) olive oil
- 2 tablespoons (30 mL) lemon juice
- 1 teaspoon (6 g) kosher or fine sea salt
- ¼ teaspoon (0.6 g) freshly ground black pepper
- Handful fresh basil, , chopped
Instructions
- In a large mixing bowl, combine tomatoes, cucumber, red pepper, shallot, garlic, olive oil, lemon juice, salt, and pepper. Mix and let sit for at least 20 minutes for the flavors to meld. (The longer you wait, the better.)
- Transfer ingredients to a blender, and blend on high until smooth. Chill for at least 2 hours.
- Serve in bowls sprinkled with fresh basil.
