Coconut Ginger Parsnip Soup

This Coconut Ginger Parsnip Soup is a powerhouse for gut healing with the star ingredient being bone broth. Bone broth is detoxifying, calming, collagen-rich, and anti-inflammatory. When consumed regularly, the result is often a nice gentle reset of the digestive system, increased energy, clarity of mind, and improvement of skin. But every single ingredient here is beneficial in reducing inflammation and initiating healing in the body. Coconut Ginger Parsnip Soup
Ingredients
- 2 tablespoons (30 mL) coconut oil
- 3 celery stalks, , diced
- 1 onion, , diced
- 3 large parsnips, , peeled and diced
- 2 large carrots, , peeled and diced
- 4-5 cloves garlic, , minced
- 5 cups (1.2 L) chicken bone broth
- 1 inch piece fresh ginger root, , peeled and grated
- Sea salt, , to taste
- 2 teaspoons (2 g) dried thyme
- 1 teaspoon (2 g) freshly ground black pepper
- 2 cups (90 g) chopped kale
- 2 cups (60 g) chopped spinach
- 1 cup (240 mL) organic canned coconut milk
- Juice of 1 lemon
Instructions
- Heat coconut oil in a large heavy pot. Add celery, onion, parsnips, and carrots. Sauté about 2-3 minutes, until vegetables soften. Add garlic and sauté for another minute. Add bone broth and bring to a boil. Lower heat to simmer and add ginger, salt, thyme, and pepper and then reduce heat. Cover and simmer 20 minutes, or until parsnips and carrots are tender. Add kale, spinach, coconut milk, and lemon juice and simmer until kale and spinach are wilted, about 3 minutes. Season with additional salt and pepper, to taste.
