This delicious Creamy Garlic Shrimp with Spinach recipe is one of the easiest skillet meals you can make! Juicy shrimp are pan seared and then cooked in a garlic butter sauce, then mixed with spinach and sour cream for a tasty 15-minute dinner. Plus, you can reheat the leftovers the next day or simply pack them as lunch for work.
The whole thing is complemented in a fantastic way by the sun-dried tomatoes, which add a touch of sweetness, and by the spinach, which soaks up some sauce and makes the dish not so heavy. This tastes great served with gluten-free pasta, toasted bread, roasted asparagus, or broccoli. And if you fancy an extra boost, you can add a dash of chili flakes.
Creamy Garlic Shrimp with Spinach
Ingredients
- 9 ounces (255 g) shrimp or prawns, , cleaned, deveined, and peeled
- ½ lemon, , juiced
- ½ teaspoon (3 g) kosher or fine sea salt
- ¼ teaspoon (0.6 g) freshly ground black pepper
- 3 tablespoons (45 g) unsalted butter
- 5 cloves garlic, , minced
- ¾ cup (80 g) sun-dried tomatoes in oil, , drained
- 3 cups (90 g) fresh spinach leaves
- 1 cup (240 mL) sour cream
Instructions
- Step 1: Place shrimp in a large bowl, pour lemon juice over top, and add salt and pepper. Toss to combine.
- Step 2: Transfer shrimp with juice to a hot nonstick skillet over medium heat. Cook for 1 minute, stirring constantly, until the lemon juice evaporates. Add butter and fry for 2 minutes, until the shrimp are lightly browned.
- Step 3: Reduce heat to low and add garlic. Stir and cook for 30 seconds. Be careful not to burn it. Add sun-dried tomatoes and spinach and sauté for 30 seconds, until spinach is wilted.
- Step 4: Add sour cream and cook for 4 minutes, stirring constantly. Remove from heat. Serve warm with toast, pasta, or roasted veggies.
