The perfect side not only for Thanksgiving or Christmas, but any time of the year. Creamy spinach comes in numerous variations and is popular in many countries. It tastes fabulous with turkey, beef steaks, and roast chicken. It’s no wonder the whole world loves it! You can also prepare it in a dairy-free and vegan version using olive oil, dairy-free cream, and dairy-free Parmesan cheese.

Ingredients 

  • 15 ounces fresh baby spinach
  • 2 tablespoons unsalted butter
  • ¼ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon nutmeg
  • 4 cloves garlic, , peeled and minced
  • cups half-and-half
  • ½ cup heavy whipping cream
  • cup Parmesan cheese, , grated

Instructions 

  • Heat a large and preferably deep skillet over medium heat. Add the spinach in handfuls, stirring after each. This step should not take more than a minute.
  • Once the spinach is wilted, add the butter and reduce the heat. Quickly season with salt, pepper, and nutmeg, and stir. Add minced garlic and mix again. This step should not take more than a minute, so that the butter and garlic are not burned.
  • Finally, stir in the half-and-half and heavy whipping cream, and bring to a boil. When the sauce begins to bubble slightly, add the Parmesan cheese and keep stirring until the ingredients are thoroughly combined and the flavors come together, about 2 minutes. Serve immediately.
