Easy Dirty Rice

This easy dirty rice is only 5 ingredients and would pair well with a number of gluten free meals!

Gluten Free Easy Dirty Rice
Ingredients
- Olive oil
- 1 large red onion, , chopped
- 1 large red bell pepper, , chopped
- 1 large jalapeño pepper, , chopped
- Kosher or fine sea salt
- Freshly ground black pepper
- 2 cups cooked white rice
- 1 (15-ounce) can black beans, drained and rinsed
Instructions
- In a large skillet, heat 3 tablespoons of olive oil over medium-high heat. Add the onion and peppers. Generously sprinkle with salt and pepper and sauté until tender, about 6-8 minutes. Let cool.
- Combine the sautéed veggies with rice and beans. Taste and adjust the seasoning. If the mixture tastes dry, stir in 1-2 tablespoons of olive oil, as needed.
