Easy Pesto Zoodles

If you love pasta but want to be healthier, try spiralizing zucchini to add more vegetables to your diet.
Easy Pesto Zoodles
Ingredients
- 2 medium zucchinis
- Olive oil, for cooking (optional)
- ½ cup homemade or store-bought pesto
- Basil leaves, to garnish
- Grated Parmesan cheese or nutritional yeast, to garnish
Instructions
How to Spiralize a Zucchini
- For 2 servings, you’ll need:
- 2 medium zucchinis
- A spiral slicer (available at many kitchen supply stores and online)
- Wash both zucchinis and trim off the ends with a sharp knife. Slice both zucchinis in half crosswise for easier spiralizing.
- Use your spiral slicer to slice each zucchini half into noodles. When you have finished spiralizing one half, add the noodles to a bowl and repeat until all the zucchini has been spiralized.
- Prepare the zucchinis as instructed above.
- If desired, heat a skillet over medium heat. Drizzle with a touch of olive oil and add the noodles to the pan. Cook until the noodles have just started to soften. Transfer to a large bowl. Add pesto and toss to coat.
- Divide between 2 plates. Garnish with basil and cheese or nutritional yeast.
