Figs Stuffed with Goat Cheese

Ingredients 

  • 12 large fresh figs
  • 4 ounces soft goat cheese, , at room temperature
  • Olive oil or olive oil spray
  • Kosher or fine sea salt
  • Freshly ground black pepper
  • Honey
  • ¼ cup chopped roasted and salted pistachios

Instructions 

  • Line a baking sheet with parchment paper or a silicone baking mat. Set the top oven rack 6 inches from the heat source. Preheat the broiler to high.
  • Cut an “x” into the top of each fig, going about ⅓ of the way down. Place on the prepared baking sheet.
  • Put the goat cheese into a small food storage bag, massage the cheese to make it very soft, cut off about ¼ inch from one of the bottom edges of the bag, and pipe the goat cheese into the figs. Brush or spray with oil and sprinkle with a small pinch of salt and a large pinch of pepper. Broil for 3-4 minutes or until the cheese is starting to brown.
  • Place figs on a serving platter and drizzle with a little honey. Top with the chopped pistachios.
