If you thought soup was only appropriate in wintertime, think again. This Gluten Free Chilled Avocado Soup recipe is an excellent example of a summer soup. It’s packed with four healthy ingredients: avocados, broth (see my post on bone broth here), fresh cilantro, and collagen powder.

Now, every health food needs a little naughty thrown in for good measure, so I’ve fried up a couple corn tortillas to make crunchy strips to top the soup. This adds a delicious contrast to the soup that you are sure to love!

Gluten Free Chilled Avocado Soup Recipe

Ingredients 

  • 2 ripe avocados, peeled, pitted, and diced
  • 2 cups gluten-free chicken or vegetable broth
  • 4 tablespoons NeoCell Super Collagen
  • ¼ cup fresh cilantro leaves, plus more for garnish
  • 1 teaspoon ground cumin
  • Kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • Vegetable oil
  • 2 corn tortillas, cut into strips
  • Chili oil, optional garnish

Instructions 

  • Combine the avocados, broth, collagen, ¼ cup cilantro leaves, cumin, ½ teaspoon salt, and pepper in a blender. Blend until very smooth. Chill for about an hour.
  • Pour enough vegetable oil into a small skillet to come up ¼ inch. Heat over high heat until it starts to shimmer. Fry the tortilla strips until golden brown, about 1-2 minutes. Remove and drain on paper towels. Sprinkle lightly with salt while still hot.
  • Serve the soup garnished with fried tortilla strips, cilantro leaves, and chili oil, if desired.
