This Gluten-Free Chocolate One-Cup Cake is one the simplest and most adaptable cake recipes I know. It is also easy to remember because it uses 1 cup of everything except the baking powder, salt, and vanilla.

This recipe contains no eggs and can very easily be adapted to be dairy free and to use what is easy for you to get or have on hand.

I used Wholesome Organic Sugar in this recipe. If you wanted to make this cake refined sugar-free, you could swap in their coconut sugar and use bittersweet chocolate chips.

Ingredients 

  • Gluten free non-stick cooking spray
  • 1 cup raw nuts, , any kind
  • 1 cup semisweet or bittersweet chocolate chips or dairy free chocolate chips
  • 1 cup butter or dairy free buttery sticks, , cut into 1-tablespoon pieces
  • 1 cup Wholesome Organic sugar
  • 1 cup gluten free flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher or fine sea salt
  • 1 cup milk, , any kind
  • 1 teaspoon pure vanilla extract
  • 1 cup dried fruit, , any kind, roughly chopped

Instructions 

  • Preheat oven to 350 degrees. Spray a 9-inch cake pan with cooking spray.
  • Place the nuts in the bowl of a food processor fitted with a steel blade. Process until the nuts resemble fine crumbs. Add the chocolate chips and process until well combined. Add the butter and sugar and process until the dough forms a sort of ball around the blade. Add the flour, baking powder, and salt, process to combine. With the machine running, add the milk and vanilla. Add the dried fruit and pulse until the fruit is incorporated.
  • Scrape the batter into the prepared pan band bake for 22-25 minutes or until the edges are dry but the center looks soft. This will give you a fudgy center. If you want a drier cake, cook a few minutes longer.

      You can try it with a high-powered blender, or if you have really excellent chopping and whisking skills you could try by hand. A food processor is the best way.
