Ingredients 

  • 2 ½ pounds white or yellow onions, 3 large
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 4 sprigs fresh thyme
  • 2 tablespoons balsamic vinegar
  • ¾ cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 pound ground boneless beef short ribs
  • 1 pound ground skirt steak or tri-tip
  • Vegetable oil
  • 6 gluten free Kaiser rolls or hamburger buns
  • 3 tablespoons melted butter
  • 6 lettuce leaves

Instructions 

  • Cut onions in half and slice thinly. Heat butter and oil together in a large skillet over medium low heat. Add the sliced onions, ½ teaspoon salt, ¼ teaspoon pepper, and thyme. Cook the onions slowly, stirring occasionally, until deeply browned and caramelized, about 45 minutes. Remove the thyme sprigs, raise heat to high, and add the balsamic vinegar.
