Fresh Gluten-Free BLT Spring Rolls

First, these spring rolls are naturally gluten-free, dairy-free, and nut-free, making them a versatile option for a variety of dietary needs.
They’re light, fresh, and packed with texture–exactly what this season calls for. Plus, they work beautifully as a party appetizer, after-school snack, or a light lunch.
They look impressive. However, they’re surprisingly simple to make. If it’s your first time rolling, don’t worry! Just prep your ingredients ahead of time, make the sauce first, and avoid over-soaking the rice paper.
Finally, tuck and roll tightly–because a snug spring roll is the best spring roll.
What You’ll Need
For the Sauce
- ¼ cup San-J Organic 25% Less Sodium Tamari
- 2 tablespoons water
- 2 tablespoons Japanese mayonnaise
- 1 tablespoon chipotle in adobo sauce
- 1 tablespoon honey (optional)
- Juice of ½ lime
For the Spring Rolls
- 6 rice paper wrappers
- 2 cups chopped lettuce (romaine or iceberg)
- 1 cup chopped tomatoes
- 6 slices bacon, cooked (or vegan bacon)
- 1 avocado, sliced into 12 pieces

Instructions
First, whisk together the tamari, water, mayonnaise, lime juice, chipotle in adobo sauce, and honey if using. Pour into a small serving dish and set aside.
Next, soak one rice paper wrapper in warm water for just 3–5 seconds. Do not over-soak. Place it on a cutting board and let it sit for 10–20 seconds until pliable.
Then, layer fillings on the third of the wrapper closest to you. Start with lettuce, followed by tomatoes, bacon (or vegan bacon), and two slices of avocado.
After that, begin rolling away from you. Tuck in the sides as you roll to keep the filling secure. Continue rolling tightly until sealed.
Finally, repeat with the remaining wrappers and serve immediately with the dipping sauce.
