This Goan Shrimp Curry recipe is inspired by the curry dishes of Southwest India. It’s full of complex flavors and is so comforting.
Goan Shrimp Curry
Ingredients
- 2 tablespoons coconut oil
- 1 medium red onion, , finely diced
- 3 cloves garlic, , grated
- 1- inch piece of ginger, , peeled and grated
- 1 cup tomato puree
- 1 tablespoon curry powder
- 1½ teaspoons paprika
- ¾ teaspoon kosher or fine sea salt
- ½ teaspoon cayenne pepper
- 1½ cups coconut milk
- 1 teaspoon tamarind concentrate
- 1 pound extra-large shrimp, , peeled and deveined
- Cooked basmati rice or cauliflower rice, , for serving
Instructions
- Heat the coconut oil in a large skillet over medium-high heat. Add the onion and sauté until it is tender and translucent, about 3-4 minutes.
- Stir in the grated garlic and ginger and cook until fragrant, about 30 seconds.
- Pour in the tomato paste, then stir in the curry powder, paprika, salt, and cayenne pepper. Cook until the mixture starts to thicken, about 2-3 minutes.
- Pour the coconut milk and tamarind concentrate into the skillet and stir well. Bring the sauce to a gentle simmer, then add the shrimp. Cook until the shrimp are opaque and cooked through, about 4-5 minutes.
- Serve over rice.
