Hatch Chile Cilantro Lime Rice

Ingredients 

  • 1 cup long grain rice
  • 2 cups gluten-free vegetable broth
  • 1 bay leaf
  • Kosher or fine sea salt
  • 4 ounces Hatch Diced Green Chiles – mild or hot
  • Zest and juice of 1 lime – zest finely grated
  • ½ cup finely chopped cilantro
  • 1 tablespoon butter or dairy-free butter

Instructions 

  • Combine the rice, vegetable broth, bay leaf, and ½ teaspoon of salt. Cook either on stovetop or in rice cooker. Add Hatch chiles, zest and juice of lime, cilantro, and butter. Fluff with a fork.
