Carol’s Homemade Applesauce

Ingredients 

  • 6 large tart apples, , such as Cortland, Mutsu, Jonathan or Crispin, cored, peeled and roughly chopped
  • ¾ cup (150 g) granulated sugar
  • A pinch of kosher salt
  • Water
  • ½ - 1 teaspoon ground cinnamon, , to taste, optional

Instructions 

  • Place the apples, sugar and salt in a medium-size, heavy saucepan and add water to barely cover the apples.
  • Bring to a boil over medium heat and cook for 15-20 minutes, mashing up the apples as they get tender and start to break down.
  • Allow the applesauce to cool, then add the cinnamon to taste.
  • Serve warm or cold. For a smoother consistency, purée in a food processor.
