Honeydew Macadamia Ice Pops

These Honeydew Macadamia Ice Pops are light and refreshing with a delicious sweetness and a nice nutty crunch.
Tips for choosing the best honeydew melon:
• Choose melons that feel heavy for their size. This indicates juiciness and a higher concentration of flavor.
• With honeydew, push your fingers on the section where the vine was attached. It should be slightly soft (not mushy or hard) and smell slightly sweet and fresh.
• Select honeydew melons that are whitish-yellow. Avoid melons with green spots or thick veins on the rind.

Honeydew Macadamia Ice Pops
Ingredients
- ½ medium honeydew melon, , seeded, rind removed, and cut into chunks
- ¼ cup (60 mL) full-fat coconut milk or heavy whipping cream
- 2 tablespoons (30 mL) honey or pure maple syrup
- ¼ teaspoon (0.7 g) ground cinnamon
- Pinch of kosher or fine sea salt
- ¼ cup (32 g) roasted and salted macadamia nuts, chopped
Instructions
- Puree the honeydew in a blender until smooth (do this in batches if needed). In a large bowl, whisk together the coconut milk, honey, cinnamon, and salt. Add the honeydew puree and whisk to combine.
- Sprinkle the chopped macadamia nuts into the bottom of 8 ice pop molds. Pour in the honeydew mixture. Add popsicle sticks and freeze until firm, 6-8 hours. (If the sticks will not stand up straight in the pops at first, freeze the pops without the sticks for about 1-2 hours, then insert the sticks and continue freezing until firm.)
