Irish Potatoes
Ingredients
- 2ยฝ pounds potatoes, such as Russet or red,ย cut into wedges (no need to peel)
- ยฝ cup water
- ยฝ cup butter, melted
- 1 tablespoon lemon juice
- 1 tablespoon dried parsley
- 2 green onions, sliced
- 3 teaspoons dried dill
- ยผ teaspoon kosher salt, orย more to taste
- ยผ teaspoon black pepper
Instructions
- Use a 6-quart slow cooker. Put only theย potatoes and water into the slow cooker.ย Cover and cook on low for 5-6 hours orย until the potatoes are fork tender.
- Drain the accumulated liquid and putย the potatoes back in the slow cooker.ย Toss the potatoes with melted butter,ย lemon juice, parsley, sliced greenย onions, dill, salt, and pepper.ย Keep the potatoes on theย warm setting and serveย right out of the pot.
