Kale Waldorf Salad

This recipe can be prepared in whole or in part ahead of time and make a great addition to any holiday dinner.
Kale Waldorf Salad
Ingredients
- ½ cup extra-virgin olive oil
- ¼ cup sherry vinegar or red wine vinegar
- 1 teaspoon kosher or fine sea salt
- ¼ teaspoon freshly ground black pepper
- 6 cups chopped kale
- ½ cup raisins
- 2 medium red apples, cored and chopped
- ½ cup toasted walnut pieces
Instructions
- Whisk together the oil, vinegar, salt, and pepper. Place the kale in a serving dish with the raisins. Add the dressing and toss to coat. (Can be made ahead up to this point and stored, covered, in the refrigerator for up to 4 hours.)
- Before serving, add the apples and walnuts and toss to combine.
