It’s chilly outside but rather than turning to a pot of chili, as is so common, I suggest trying my new Keto Green Chile Cauliflower Soup recipe. This dish is creamy, flavorful, and made with simple, easy-to-find ingredients.

After the bacon gets cooked, the cauliflower is cooked in the bacon grease to soak up all that delicious flavor. After the cauliflower and broth are blended, they are then mixed with cream cheese, cheddar cheese, and heavy cream. This creamy consistency and flavor pairs beautifully with the spice of the Hatch diced green chilies. Top it with bacon, green onions, and more cheese and you’re done!

Keto Green Chile Cauliflower Soup

Ingredients 

  • 4 slices sugar-free thick cut bacon, , diced
  • 1 large head cauliflower, , chopped
  • cups gluten-free chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • Kosher or fine sea salt
  • 4 ounces full-fat cream cheese, , cut into cubes
  • 1 cup grated sharp cheddar cheese, , plus more for serving
  • ½ cup heavy cream
  • 2 (4-ounce) cans Hatch Diced Green Chilies, , mild or hot
  • 4 green onions, , thinly sliced

Instructions 

  • Place the bacon in a Dutch oven or large stock pot. Turn the heat to medium and cook, stirring occasionally until the bacon is crispy. Remove with a slotted spoon and drain on paper towels and set aside.
  • Add the cauliflower to the bacon grease and cook, stirring occasionally until starting to brown, about 5 minutes. Add the chicken broth, garlic powder, onion powder, pepper and 1 teaspoon salt. Bring to a boil. Cover the pot, lower the heat, and simmer until the cauliflower is very tender, 20-30 minutes.
  • Working in batches if necessary, blend the soup until smooth. Return to the pot, add the cream cheese, cheddar cheese, cream, and green chilies. Heat on medium-low until the cheeses are fully melted.
  • Serve topped with the bacon, extra cheese, and green onions.

    Any good alternatives to heavy cream besides coconut milk?
