Mango Bruschetta

These mango bruschetta are perfect for any sunny day activity!

Mango Bruschetta
Ingredients
- 8 slices of gluten-free bread, (preferably French-style baguette)
- 2 tablespoons unsalted butter
- 7 ounces (200 g) fresh ricotta cheese
- 4 ounces (115 g) blueberries
- 1 large mango, , peeled and sliced
- 2 tablespoons natural honey, (preferably multifloral, lavender, acacia, or lime honey)
- ½ cup fresh mint leaves
Instructions
- Preheat the oven to 350ºF. Line a large baking tray with parchment paper. Brush both sides of bread with butter and place on the baking tray. Bake for 5-7 minutes, until golden, turning halfway through. Remove the tray from the oven and set aside for 15 minutes to cool.
- Spread the ricotta on the toast, and top with blueberries and mango slices. Drizzle with honey and decorate with fresh mint leaves. Serve immediately.
