Mashed Garlic Cauliflower

Mashed Garlic Cauliflower
Ingredients
- 2 large heads of cauliflower, , cut into equal sized florets
- 12 garlic cloves, , peeled and smashed Kosher salt
- 4 tablespoons unsalted butter, , dairy-free butter substitute, or olive oil
- ¼ teaspoon freshly grated nutmeg
- ½ teaspoon freshly ground black pepper
- ½ cup grated Parmesan cheese or nutritional yeast
Instructions
- Place the cauliflower and garlic in a pot with salted water and bring to a boil. Cook until the cauliflower is very tender, about 10 – 15 minutes. Drain very well.
- Place the drained cauliflower and garlic into a food processor and process until smooth. Return the mixture to the pot. Over low heat, add the remaining ingredients and cook, stirring constantly, for 2 minutes to heat through. Season with more salt if needed.
- Serve hot.
