Mashed Potatoes with Herbs & Garlic Oil
Ingredients
- 3 pounds Yukon Gold potatoes, , peeled and cut into chunks
- 1¾ cups milk or unsweetened almond or coconut milk
- ½ cup butter or dairy-free butter
- ¼ cup chopped chives
- ¼ cup chopped fresh parsley, , plus more for garnish
- 1 tablespoon finely chopped fresh thyme
- 1 tablespoon garlic oil*
- Kosher or fine sea salt, , to taste
- Freshly ground black pepper, , to taste
Instructions
- Place the potatoes in a large pot and cover with water. Bring to a boil over high heat. Reduce heat to medium-low and cook at a gentle boil for 10-15 minutes or until fork tender. Drain well and transfer back to the pot.
- Add the milk and butter. Mash with a potato masher until smooth (or until desired consistency is reached). Add the herbs and garlic oil. Stir to combine. Season to taste with salt and pepper. Transfer to a serving dish and garnish with parsley.

*Garlic oil can be found in many regular grocery stores, health food stores, and specialty shops.
