These Mashed Red Potatoes are naturally gluten-free, easy to make, and pair perfectly with any main dish for the holidays.
Gluten-Free Mashed Red Potatoes Recipe
Ingredients
- 2 pounds (1 kg) red potatoes, cut into 1-inch cubes
- ¼ cup (30 g) butter or dairy-free butter, plus more for serving
- 3 cloves garlic, , minced or finely grated
- ⅓ cup (80 mL) extra-virgin olive oil
- 3 tablespoons (9 g) finely chopped fresh chives, divided
- Kosher or fine sea salt, , to taste
- Freshly ground black pepper, , to taste
Instructions
- Place the potatoes in a large pot and cover with water. Bring to a boil over high heat. Reduce heat to medium-low and cook at a low boil until the potatoes are tender, 10-12 minutes.
- While the potatoes boil, melt the butter in a small pot. Add the garlic and cook, stirring, for 1 minute. Add the olive oil, whisk to combine, and remove from heat.
- When the potatoes are tender, transfer to a large bowl. Add the butter mixture, 2 tablespoons chives, and salt and pepper, to taste. Mash to reach desired texture. Serve topped with pats of butter and remaining tablespoon of chives sprinkled on top.
