Mexican-Style Grilled Corn on the Cob

Ingredients 

  • 6 medium ears of corn, husks and silk removed
  • 1 cup mayonnaise
  • 2 cups crumbled queso fresco cheese, divided use
  • 1 teaspoon chili powder, plus more for sprinkling

Instructions 

  • Preheat a grill to medium.
  • Arrange the corn on the grill. Grill for about 10 minutes, turning regularly, until grill marks appear on each side. Remove from the grill and let cool slightly.
  • Mix together the mayonnaise, 1½ cups of the cheese, and chili powder. Spread the mayonnaise mixture on each ear of corn. Sprinkle with the remaining cheese and chili powder.
