Though peanut butter and beef may sound like an odd combination at first thought, it’s really not! It’s got a delicious Thai-inspired flavor to it that you’re sure to love.

Peanut Butter Beef
Ingredients
- 2 pounds (1 kg) thin cut stir fry beef
- ¼ cup (50 g) brown sugar
- ½ teaspoon (1 g) ground ginger
- ¼ cup (60 mL) gluten-free soy sauce
- ¼ cup (65 g) natural peanut butter
- 4 cloves garlic, , chopped
- 1 medium white or yellow onion, , chopped (optional)
Instructions
- Use a 4-quart slow cooker. Place all ingredients into a zippered freezer bag or freezer container. Freeze until ready to use.
- Defrost the bag the night before in the refrigerator and dump contents into the slow cooker in the morning.
- Cover and cook on low for 6-8 hours or on high for about 4 hours. The longer you cook the meat, the more tender it will be. Serve over steamed white or brown basmati rice.
