Pear Salad with Blue Cheese & Honey Vinaigrette
Ingredients
For the dressing:
- 5 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 2 teaspoons fresh lemon juice
- 2 teaspoons honey
- 1 teaspoon Dijon mustard
- ½ teaspoon ground ginger
- ¼ teaspoon kosher or fine sea salt
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon finely grated lemon zest
For the salad:
- 3 pears, , cored and sliced
- 2 cups arugula
- 1 cup endive frisée
- 1 cup radicchio
- 6 ounces blue cheese, , cut into small cubes
- ¾ cup toasted walnuts, , roughly chopped
Instructions
- Place all the ingredients for the dressing in a jar. Seal tightly and shake vigorously until thoroughly combined. Set aside.
- In a big bowl, toss together sliced pears, arugula, endive frisée, radicchio, and blue cheese. Add the dressing and toss again. Divide the salad among 4 plates. Top with chopped toasted walnuts and serve.
