Pear Salad with Blue Cheese & Honey Vinaigrette

Ingredients 

For the dressing:

  • 5 tablespoons olive oil
  • 2 tablespoons white wine vinegar
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon ground ginger
  • ¼ teaspoon kosher or fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon finely grated lemon zest

For the salad:

  • 3 pears, , cored and sliced
  • 2 cups arugula
  • 1 cup endive frisée
  • 1 cup radicchio
  • 6 ounces blue cheese, , cut into small cubes
  • ¾ cup toasted walnuts, , roughly chopped

Instructions 

  • Place all the ingredients for the dressing in a jar. Seal tightly and shake vigorously until thoroughly combined. Set aside.
  • In a big bowl, toss together sliced pears, arugula, endive frisée, radicchio, and blue cheese. Add the dressing and toss again. Divide the salad among 4 plates. Top with chopped toasted walnuts and serve.

Notes

Tip: If you need to prepare this salad in advance, drizzle sliced pears lightly with lemon juice to prevent them from going brown and combine the salad with the dressing just before serving.
