Roasted Stone Fruit Medley

Ingredients 

  • 3 pounds fresh stone fruit , (nectarines, peaches, plums, cherries), washed, pitted, and diced
  • ¾ cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • 2 limes, , juiced
  • Vanilla ice cream, (regular or dairy-free), for serving
  • Whipped cream, (regular or dairy-free), for serving

Instructions 

  • Use a 6-quart slow cooker. Place the diced fruit into the slow cooker and stir in the sugar, vanilla, and lime juice. Cover and cook on low for 5 hours, or on high for about 2 hours. Stir well and serve over ice cream with fresh whipped cream.
  • Leftovers can be eaten warm or cold.
