Slow Cooker Beef Chili

Ingredients 

  • 1 tablespoon extra-virgin olive oil
  • 2 pounds lean ground beef
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 large yellow onion, , chopped
  • 1 tablespoon minced garlic
  • 1, 28- ounce can crushed tomatoes
  • 1, 6- ounce can tomato paste
  • 1, 15- ounce can of red kidney beans, , drained and rinsed
  • ½ cup gluten-free beef broth, (I used Beef Bone Broth)
  • 1 tablespoon light brown sugar
  • 3 tablespoons chili powder
  • 2 teaspoon kosher salt, , divided
  • 1 teaspoon freshly ground black pepper, , divided
  • 1 teaspoon ground cumin
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper, (or more to taste)
  • Avocado, , for garnish
  • Shredded cheese or dairy-free cheese, , for garnish
  • Sliced jalapeno
  • Sour cream or dairy-free sour cream, , for garnish
  • Cilantro, , for garnish

Instructions 

  • Add the olive oil to a medium skillet and heat on medium-high heat. Once the oil is hot, add the ground beef. Season it with half of the salt and half of the pepper and cook until browned.
  • Drain the ground beef and add it to the slow cooker with the remaining salt and pepper and the rest of the ingredients. Mix well to combine. Cook on low for 6-8 hours or high for 3-4 hours.
  • Serve with your favorite chili toppings such as avocado, shredded cheese, sliced jalapeno, sour cream, and cilantro.

Notes

Feel free to add an additional can of beans and additional spices to suit your taste.
The sugar does not sweeten the chili. It helps balance the acidity of the canned tomatoes.
