Slow Cooker Curried Collards
Ingredients
- 1 pound (454 g) fresh collard greens, , trimmed and sliced into ¼-inch ribbons
- 1 medium yellow onion, , thinly sliced lengthwise
- 1 tablespoon (15 g) minced garlic, , from about 3 cloves
- 1 teaspoon (2 g) curry powder
- 1 teaspoon (3 g) turmeric powder
- 1 teaspoon (2.3 g) paprika
- 1 teaspoon (6 g) kosher or fine sea salt
- ¼ teaspoon (0.5 g) freshly ground black pepper
- ⅛ - ¼ teaspoon (0.25-0.5 g) crushed red pepper flakes, to taste
- 1 (13.5-ounce) can full-fat coconut milk
- ½ cup (120 mL) bone broth or vegetable stock
- Fresh lime wedges and chopped scallions, , for serving
Instructions
- Stir together all ingredients in a 7-quart slow cooker. Cover and cook on low for 6 hours or until greens are tender, stirring occasionally.
- Drizzle with fresh lime juice before serving. Garnish with scallions.
