A global pandemic is a bitter pill to swallow, so I figured we all need a little something sweet to counterbalance that. But just because it’s sweet, doesn’t mean it has to be full of sugar and empty carbs! Say hello to the delicious, simple, throw-together-and-enjoy, Sugar-Free Grain-Free Berry Keto Cobbler.

With a few sugar-free products from Swerve, including their cup-for-cup sugar replacement, grain-free cake mix, and cup-for-cup confectioners’ sugar replacement, you can make this dish Keto-friendly and low glycemic.

This is a no-fuss, toss together and bake kind of recipe, which is perfect when the last thing you want to do is stress over tedious steps in a complicated recipe. Although some people love to cook and find it to be a great stress reliever, during a time when you’re mostly cooking at home and not able to take a break and go out to a restaurant, something a little simpler might be nice.

Another bonus about this recipe is that it can be made with frozen berries if you don’t have fresh berries on hand. They can be thawed or frozen, either way will work!

Sugar-Free Grain-Free Berry Keto Cobbler

Ingredients 

  • Gluten free non-stick cooking spray
  • 4 cups berries, (raspberries, blueberries, blackberries, strawberries, or a combination)
  • ¼ cup Swerve Granulated
  • 8 ounce cream cheese
  • 1 box Swerve Vanilla Cake Mix
  • 3 large eggs
  • 1/3 cup vegetable oil
  • 1/3 cup water
  • 1 tablespoon pure vanilla extract
  • 2 tablespoons Swerve Confectioners, – optional, for dusting

Instructions 

  • Preheat oven to 350 degrees. Spray an 8x8-inch baking dish with cooking spray.
  • Toss the berries with the Swerve Granulated and spread evenly into the bottom of the prepared baking dish. Cut the cream cheese into small pieces and scatter evenly over the top of the berries.
  • Combine the cake mix, eggs, oil, water, and vanilla in a mixing bowl and whisk until smooth. Pour over the top of the berries and cream cheese evenly. Bake for 50-60 minutes or until golden brown. Let cool 10 minutes before dusting with Swerve Confectioners and serve.
