It’s a scorcher right now here in Florida. Walking from your house to your car is likely to have you dripping in sweat in a matter of seconds! You know how when it’s really cold out, you start your car to warm it up before you get inside? Well, here you should do the opposite and start your car to get the A/C running nice and cold before you get in. Another way to keep cool is by making chilled treats. If you’re looking for something to help cool you off, these Sunshine Pops are a perfect choice.

I call these Sunshine Pops because the oranges rise up towards the top, like the sun, and they contain vitamin D3, also like the sun! Although the sun gives us vitamin D, it’s often a good idea to supplement with it because most Americans are deficient. Vitamin D plays an important role in the immune system and is especially good for children. Did you know a lack of vitamin D in children has been linked in studies to an exacerbation of asthma symptoms? For these pops, I used ChildLife Essentials Vitamin D3 Drops, which mix in well with recipes.

For the pops, I used this popsicle maker. It has 10 molds, which is perfect for this recipe.

Sunshine Pops Recipe

Ingredients 

Instructions 

  • Combine the coconut milk and agave in a large glass measuring cup with a spout. Add appropriate number of drops of the Vitamin D3 for 10 doses and stir.
  • Drain the orange slices and drop 5 or 6 slices into popsicle molds; do not fill. Pour the coconut milk over the orange slices, add popsicle sticks, and freeze for at least 4 hours or until solid.
