Thanksgiving Hack – Super Easy Gluten Free Yam Casserole Recipe

So, Thanksgiving is coming up fast and you have a lot on your plate in order to get everything on everyone else’s plate.  If you are in the need for a super quick, super easy gluten free yam casserole recipe, have I got one for you! It has only 6 ingredients, including salt and pepper, and takes about 2 minutes to whip up! After that you can pop it in the oven at the time or cook it ahead and re-heat in the microwave if oven space is at a premium.

What’s the secret to this super simple, really delish yam casserole? Ready-made canned vanilla frosting! It sounds crazy, I know, but it works!

Gluten Free Easy Yam Casserole Recipe

Ingredients 

  • 2 40-ounce cans  yams
  • ½ plus ¼ cup Wholesome! Organic Vanilla Frosting, divided
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon kosher or fine sea salt
  • 1 teaspoon freshly ground black pepper
  • 1 ¼ cups pecan halves, finely chopped

Instructions 

  • Preheat oven to 375 degrees. Oil an 8x8 or 9x9 square baking pan.
  • Drain the syrup from one can of yams and place in a food processor with the other can, undrained. Add ½ cup frosting, pumpkin pie spice, salt, and pepper. Process until smooth, scraping down the sides of the bowl as needed. Place the mixture into the prepared baking dish and smooth the top.
  • Sprinkle the chopped pecans over the top. Melt the remaining ¼ cup frosting in the microwave for a few seconds and drizzle over the top of the pecans. Bake for 30 minutes or until hot.
