Dairy-free Almond Flour Bread with Goji Berries and Chocolate Chips

Ingredients

  • 2 ½ cups almond flour
  • 2 tablespoons cornstarch or arrowroot powder
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 4 large eggs
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil or avocado oil
  • 1 teaspoon pure vanilla extract
  • ¼ cup almond milk (or any other plant-based milk)
  • ½ cup Bare Organics Goji Berries
  • ½ cup dairy-free chocolate chips

Instructions

  • Preheat your oven to 325 degrees Grease a 9x5-inch loaf pan or line it with parchment paper.
  • In a large bowl, whisk together the almond flour, cornstarch, baking powder, and salt.
  • In a separate bowl, mix the eggs, maple syrup, melted coconut oil, vanilla extract, and almond milk until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold in the goji berries and vegan chocolate chips.
  • Pour the batter into the prepared loaf pan and spread it out evenly. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
