Ingredients 

  • 2 pounds pork tenderloin, cut into 1-inch cubes
  • 1 large yellow onion, chopped
  • 6 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 (15-ounce) cans white hominy, drained and rinsed
  • 6 cups chicken broth
  • 1 (14.5-ounce) can Hatch Organic Red Enchilada Sauce
  • Salt and black pepper to taste

For garnish – Optional:

  • Shredded cabbage
  • Sliced radishes
  • Diced white onion
  • Fresh cilantro
  • Lime wedges
  • Sour cream or Mexican crema

Instructions 

  • Pat the pork tenderloin cubes dry and season with salt and pepper. Heat the olive oil or lard in a large pot or Dutch oven over medium-high heat. Brown the pork in batches, about 5 minutes per batch, and set it aside.
