  • 4 sweet potatoes, (scrubbed and dried)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 6 ounces brie cheese, rind removed and cubed
  • ½ cup Terrapin Ridge Farms Cranberry Relish with Grand Marnier
  • ¼ cup toasted pecans or walnuts
  • Fresh parsley or thyme, for garnish

Instructions 

  • Preheat oven to 400°F.
  • Rub sweet potatoes with olive oil and sprinkle with kosher salt.
  • Place on a baking sheet and bake for 50–60 minutes, until fork tender. Once baked, carefully slice each potato lengthwise and gently fluff the insides with a fork.
