Why You’ll Love This Spaghetti Bake
This pasta bake is warm, cheesy, and irresistibly savory, all while staying surprisingly simple. Because roasting enhances the tomatoes’ natural sugars, even grocery-store winter tomatoes turn into a luscious sauce. Furthermore, this recipe requires very little hands-on work, making it ideal for busy evenings. While the tomatoes and garlic roast, you cook the pasta; after that, everything comes together with ease.
Perfect for When Tomatoes Aren’t in Season
Out-of-season tomatoes often taste dull, but roasting them changes everything. As they soften and blister, their juices concentrate, creating a depth of flavor similar to peak summer tomatoes. Consequently, this dish is perfect for winter months, chilly spring evenings, or any time you’re craving bright tomato flavor without relying on fresh summer produce.
What You’ll Need
You’ll only need a handful of pantry staples and fresh ingredients:
- Mountain High Organics Gluten-Free Spaghetti
- Cherry or grape tomatoes
- Garlic
- Olive oil
- Kosher or fine sea salt
- Black pepper
- Italian seasoning
- Crushed red pepper flakes (optional)
- Shredded mozzarella
- Grated Parmesan
- Fresh basil or parsley

Tips for the Best Results
Use Quality Gluten-Free Pasta
Sturdy gluten-free spaghetti ensures the noodles remain tender yet firm, even after baking. Mountain High Organics spaghetti holds up especially well.
Don’t Rush the Roasting
Allow the tomatoes to fully soften and burst. This step builds the bold, roasted flavor that defines the entire dish.
Create the Perfect Sauce Texture
If the sauce seems too thick after tossing with the pasta, simply add a splash of reserved pasta water. This helps the sauce cling beautifully to every strand.
Customize the Heat
A pinch of crushed red pepper flakes adds warmth without overpowering the dish. Increase or omit depending on your preferences.

Serving Suggestions
Serve this pasta bake immediately for the best texture. It pairs nicely with crisp salads such as this Kale-Apple Salad with Warm Bacon Dressing, roasted vegetables like this Bacon Roasted Brussels Sprouts with Ranch Dip, or these Gluten-Free Garlic-Parmesan Drop Biscuits.
Because it’s hearty yet not heavy, it makes a satisfying weeknight dinner the whole family will love.

- Refrigerate: Store in an airtight container for up to 3 days.
- Reheat: Warm in the microwave or heat in the oven at 350°F until hot throughout.
- Make-Ahead Tip: Roast the tomatoes and garlic a day in advance for an even faster weeknight meal.

- 6 cloves garlic, peeled
- 3 tablespoons olive oil
- 1 teaspoon kosher or fine sea salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- ¼ teaspoon crushed red pepper flakes
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 Tablespoons fresh basil or parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a large baking dish, combine cherry tomatoes, whole garlic cloves, olive oil, salt, pepper, Italian seasoning, and red pepper flakes if using. Toss everything together so the tomatoes are well-coated.
- Roast for 20–25 minutes, until the tomatoes are blistered and soft and the garlic is golden. Leave oven on.

- Once the tomatoes are roasted, remove the dish from the oven. Use a fork to mash some of the roasted tomatoes and garlic to create a chunky sauce.
- Add the cooked pasta directly into the baking dish, tossing to coat. If the sauce seems too thick, add a splash of reserved pasta water.
- Sprinkle mozzarella and Parmesan evenly over the top.
- Return the dish to the oven and bake for another 8–10 minutes, until the cheese is melted and bubbly.
- Top with fresh basil or parsley, then serve hot.
