This Kale-Apple Salad with Warm Bacon Dressing is a fantastic dish that highlights the freshness of kale and is great served during wintertime.

Kale-Apple Salad with Warm Bacon Dressing

Ingredients 

  • 1 bunch fresh kale, , stemmed and chopped (about 8 ounces/226 grams)
  • 1 medium red apple, , cored and thinly sliced
  • 2 stalks celery with leaves, , thinly sliced
  • ½ small red onion, , thinly sliced
  • 4 pieces thick-sliced bacon, , chopped (about 8 ounces/226 grams)
  • 2 tablespoons (30 mL) lemon juice
  • 1 tablespoon (15 mL) apple cider vinegar
  • 1 tablespoon (15 mL) pure maple syrup
  • ½ teaspoon (2.5 mL) Dijon mustard
  • Kosher or fine sea salt, , to taste
  • Freshly ground black pepper, , to taste

Instructions 

  • Combine kale, apple, celery, and onion in a bowl; set aside.
  • Cook bacon in a nonstick skillet over medium heat until crispy; transfer to a paper towel to drain.
  • Whisk lemon juice, vinegar, maple syrup, and mustard into the bacon fat until slightly thickened and creamy; remove from heat. Season with salt and pepper, to taste. Immediately pour over salad and toss to coat.
  • Crumble the bacon onto the salad. Serve immediately.
