Kale-Apple Salad with Warm Bacon Dressing

Eating plenty of leafy greens is touted as a way to feel physically more fit and full of energy, while their eye-popping color palette (think purple Russian kale and rainbow chard!) lifts the spirit. This Kale-Apple Salad with Warm Bacon Dressing is a fantastic dish that highlights the freshness of kale and is great served during wintertime.

Kale-Apple Salad with Warm Bacon Dressing
Ingredients
- 1 bunch fresh kale, , stemmed and chopped (about 8 ounces/226 grams)
- 1 medium red apple, , cored and thinly sliced
- 2 stalks celery with leaves, , thinly sliced
- ½ small red onion, , thinly sliced
- 4 pieces thick-sliced bacon, , chopped (about 8 ounces/226 grams)
- 2 tablespoons (30 mL) lemon juice
- 1 tablespoon (15 mL) apple cider vinegar
- 1 tablespoon (15 mL) pure maple syrup
- ½ teaspoon (2.5 mL) Dijon mustard
- Kosher or fine sea salt, , to taste
- Freshly ground black pepper, , to taste
Instructions
- Combine kale, apple, celery, and onion in a bowl; set aside.
- Cook bacon in a nonstick skillet over medium heat until crispy; transfer to a paper towel to drain.
- Whisk lemon juice, vinegar, maple syrup, and mustard into the bacon fat until slightly thickened and creamy; remove from heat. Season with salt and pepper, to taste. Immediately pour over salad and toss to coat.
- Crumble the bacon onto the salad. Serve immediately.
