We Took the Viral Trend and Made It Even Better

If you’ve spent any time on social media lately, you’ve probably seen pickle pizza popping up everywhere. Tangy pickles, gooey cheese, creamy sauce, it’s one of those food trends that sounds a little strange until you take your first bite. Then it all makes sense.

Of course, we couldn’t leave it alone. We decided to take the viral pickle pizza craze and give it an upgrade by adding juicy homemade meatballs. The result? A pizza that’s hearty enough for dinner while still delivering all the bright, tangy flavors that made pickle pizza famous.

The secret is in the meatballs. Instead of relying on traditional seasonings alone, we mix in Marukan Sudachi Ponzu, which adds a delicious burst of citrusy umami flavor that makes every bite more savory and complex. It perfectly complements the creamy dill base, melted mozzarella, and crisp homemade pickles, creating a pizza that’s bold, balanced, and completely irresistible.

Whether you’re already a pickle pizza fan or you’re trying it for the first time, this gluten-free recipe might just become your new favorite pizza night tradition.

What You’ll Need

One of the best things about this recipe is that it uses simple ingredients to create layers of incredible flavor. Here’s what you’ll need:

  • Gluten-free pizza dough
  • Ground beef or a beef and pork blend
  • Gluten-free breadcrumbs
  • Marukan Sudachi Ponzu
  • Marukan Seasoned Gourmet Rice Vinegar
  • English cucumber
  • Whipped cream cheese
  • Fresh dill
  • Garlic
  • Mozzarella cheese
  • Red onion
  • Olive oil
  • A few pantry seasonings like garlic powder, onion powder, and black pepper

The magic comes from the combination of Marukan Sudachi Ponzu, which gives the meatballs a bright, citrusy umami flavor, and Marukan Seasoned Gourmet Rice Vinegar, which quickly transforms fresh cucumbers into crisp, tangy pickles that make this pizza so irresistible.

Why This Pickle Pizza Works

The beauty of pickle pizza is all about contrast. Creamy meets tangy. Rich meets fresh. Crispy crust meets melty cheese.

This version takes those flavors even further. The whipped dill cream cheese creates a smooth, flavorful base, while homemade quick pickles add crunch and brightness. Then come the meatballs, bringing a satisfying bite and plenty of savory flavor. Every ingredient has a purpose, and together they create a pizza that’s surprisingly well balanced.

Even better, it’s made with gluten-free pizza dough, making it a delicious option for anyone following a gluten-free lifestyle.

Marukan Sudachi Ponzu Makes the Difference

The ingredient that truly sets this pizza apart is Marukan Sudachi Ponzu.

Blended directly into the meatball mixture, it adds layers of bright citrus, savory umami, and just enough acidity to complement the richness of the meat. Instead of tasting like ordinary meatballs, these become flavorful little bites that pair perfectly with the creamy cheese and tangy pickles.

Meanwhile, the quick pickles are made with Marukan Seasoned Gourmet Rice Vinegar, giving fresh cucumbers plenty of tang while keeping them crisp and refreshing. Together, these two Marukan products create the signature flavor that makes this pizza unforgettable.

Tips for the Best Pickle Pizza

  • Drain the quick pickles well before adding them to the pizza so the crust stays crisp.
  • Don’t overmix the meatball mixture—gentle mixing keeps the meatballs tender.
  • Bake the meatballs ahead of time so assembling the pizza is quick and easy.
  • Finish with extra fresh dill after baking for the freshest flavor.

  • ½ pound ground beef, (or beef/pork blend)
  • ¼ cup gluten-free breadcrumbs
  • 1 egg
  • 3 tablespoons Marukan Sudachi Ponzu
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper

Creamy Pizza Base

  • 6 ounces whipped cream cheese
  • 1 clove garlic, finely grated

  • ½ teaspoon black pepper

Pizza

  • 1 ball pre-made gluten-free pizza dough
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons thinly sliced red onion
  • Extra fresh dill for garnish
  • Olive oil, for brushing

Instructions

Make the Quick Pickles

  • Slice the cucumber into a jar or bowl. Heat the Marukan Seasoned Gourmet Rice Vinegar, then pour over the cucumbers and let sit for at least 20 minutes. Refrigerate, covered until ready to use.

Prepare the Meatballs

  • Preheat the oven to 400°F and line a baking sheet with parchment.
  • In a mixing bowl, combine the ground meat, gluten-free breadcrumbs, egg, Marukan Sudachi Ponzu, garlic powder, onion powder, and pepper. Mix gently until just combined.
  • Form into small 1-inch meatballs and place on the prepared baking sheet. Bake for 12–15 minutes, or until cooked through. Set aside.

Make the Whipped Dill Cream Cheese

  • In a small bowl, combine the softened cream cheese, grated garlic, dill, milk or cream, and black pepper. Whip with a fork or hand mixer until smooth and spreadable.

Assemble the Pizza

  • Preheat oven according to the gluten-free dough package directions (usually 425–450°F).
  • Roll or press the gluten-free pizza dough onto a parchment-lined pizza pan or baking sheet. Brush the edges lightly with olive oil.
  • Spread the whipped dill cream cheese evenly over the crust, leaving about a ½-inch border.
  • Sprinkle the mozzarella over the cream cheese layer. Arrange the baked meatballs on top, then scatter the drained quick pickles and red onion slices over the pizza.

Bake

  • Bake for 12–15 minutes, or until the crust is crisp and the cheese is melted and lightly golden.

Finish and Serve

  • Remove from the oven and sprinkle with extra fresh dill. Slice and serve warm.
