Red, White & Blue Berry Melon Salad
Servings: 6 servings

Ingredients
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 teaspoon kosher or fine sea salt
- 8 cups watermelon, cut into 1-inch pieces (from a small seedless watermelon)
- 12 ounces fresh blueberries
- ¼ cup fresh mint leaves
- 8 ounces feta cheese, cut into small dice
Instructions
- In a large mixing bowl, whisk together the lemon juice, olive oil, and salt. Add the watermelon, blueberries, and mint. Toss to coat. Can be made up to 2 hours ahead to this point. Cover and refrigerate.
- Just before serving, stir in the feta cheese.
