This Kimchi Ramen recipe is a perfect example of how you can take that convenience and turn it into something truly crave-worthy. Not only is it quick and easy to prepare, but it’s also packed with flavor thanks to umami-rich ingredients like mushrooms, gochujang, and tangy kimchi.
Why You’ll Love This Recipe
- Quick and comforting: It’s ready in about 15 minutes, making it ideal for lunch or weeknight dinner.
- Diet-friendly: Naturally gluten-free, dairy-free, egg-free, nut-free, and vegan (as long as the potstickers are vegan) – it checks all the boxes.
- Bold, elevated flavors: This isn’t just a cup of plain noodles. It’s a full, hearty meal with depth and spice.
- Customizable: Add veggies, tofu, or an egg if you’re not vegan. The base is incredibly versatile.
What Makes It Extra Special
We started with GloryLand gluten-free ramen, which provides that classic ramen noodle texture without any gluten. Then, we built on that with sautéed mushrooms, spicy-sweet gochujang, and probiotic-rich kimchi. And to make things even more exciting? A handful of gluten-free potstickers tossed in for good measure.
That’s right—this isn’t just ramen. It’s elevated ramen that feels like a full-on restaurant meal made right at home.
Tips and Ideas
- Potsticker variety: Use veggie, tofu, or chicken potstickers depending on your preferences.
- Spice control: Adjust the amount of gochujang to make it more or less spicy.
- Add protein: Toss in cubed tofu or a soft-boiled egg for extra staying power.
- Fresh toppings: Don’t skip the green onions! A sprinkle of sesame seeds or a drizzle of sesame oil also adds great flavor.

What kind of kimchi should I use?
Use gluten-free kimchi—many are naturally gluten-free, but always double-check the label.
Is this super spicy?
It has a kick, but you can reduce the gochujang or add more water to mellow it out.
