Sugar-Free Sweet and Spicy Rubbed Pork Chops

A little bit of sweet, a little bit of spice, and a little bit of savory makes for a delicious meal. With these Sugar-Free Sweet and Spicy Rubbed Pork Chops, everything you need to know about them is in the name!

To start, they’re sugar-free yet they’re sweet, thanks to the help of Swerve. Swerve is a sugar-free, zero calorie, non-glycemic sweetener that is a cup-for-cup sugar replacement and comes in brown, regular granulated, and confectioners. So, we start with Swerve and add the spicy – chipotle chili powder. Next we add some more spices to make a complete, flavorful rub, and then, well, we rub the rub on the pork chops.

While the pork chops sit at room temperature for 30 minutes, take that time to prep some veggies, toss up a side salad, and/or chop some sweet potatoes to roast. While the pork chops are baking, roast the sweet potatoes, finish cooking your veggies or making your salad dressing, and by the time the chops have done cooking and resting … ta-da! Dinner is served.

Ingredients 

Sweet and Spicy Rub

  • ¼ cup Swerve Brown
  • 2 tablespoons chipotle chili powder
  • 2 tablespoons smoked paprika
  • 2 tablespoons ground cumin
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons kosher or fine sea salt
  • 1 tablespoon black pepper
  • 1 tablespoon dry mustard powder

Pork Chops

  • 4 bone-in center cut pork chops
  • 4 tablespoons Sweet and Spicy Rub

Instructions 

Sweet and Spicy Rub

  • Combine all ingredients in a small bowl and whisk well until fully combined. Can be stored in an air-tight container for up to 6 months in the pantry. (Makes about 1 cup.)

Pork Chops

  • Line a baking sheet with foil.
  • Sprinkle 1 tablespoon of rub on all sides of the pork chops, pressing the rub onto the meat well. Place on the prepared baking sheet and let sit at room temperature for 30 minutes.
  • Preheat the oven to 400 degrees. Bake the pork chops for 20 minutes or until they reach an internal temperature of 145 degrees. Let sit for 5 minutes before serving.

    I would absolutely recommend to anyone looking for a sugar free rub option! I personally don’t love swerve but the taste doesn’t come through just the sweet.
