Carrots seasoned with fresh herbs and maple syrup, are the epitome of a spring vegetable side and for Passover they also symbolize the sweetness of freedom.

Sweet Thyme Carrots

Ingredients 

  • 2 pounds whole carrots
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons pure maple syrup
  • 8 large sprigs of fresh thyme, , more for garnish
  • Kosher or fine sea salt, , to taste
  • Freshly ground black pepper, , to taste

Instructions 

  • Preheat the oven to 400°F.
  • Wash, peel and slice the carrots on the bias into similar sized pieces so that they cook evenly.
  • In an oven-safe casserole dish, combine the carrots, oil, maple syrup and sprigs of thyme. Season with salt and pepper. Stir well to coat the carrots evenly.
  • Bake 20 minutes or until fork tender. Remove from the oven and discard the tough stems from the thyme.
  • Sprinkle more fresh thyme leaves to garnish and serve.
