Sweet Thyme Carrots

Carrots seasoned with fresh herbs and maple syrup, are the epitome of a spring vegetable side and for Passover they also symbolize the sweetness of freedom. Sweet Thyme Carrots are a perfect example of this delicious and meaningful dish.

Sweet Thyme Carrots
Ingredients
- 2 pounds whole carrots
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons pure maple syrup
- 8 large sprigs of fresh thyme, , more for garnish
- Kosher or fine sea salt, , to taste
- Freshly ground black pepper, , to taste
Instructions
- Preheat the oven to 400°F.
- Wash, peel and slice the carrots on the bias into similar sized pieces so that they cook evenly.
- In an oven-safe casserole dish, combine the carrots, oil, maple syrup and sprigs of thyme. Season with salt and pepper. Stir well to coat the carrots evenly.
- Bake 20 minutes or until fork tender. Remove from the oven and discard the tough stems from the thyme.
- Sprinkle more fresh thyme leaves to garnish and serve.
